Vegan Mushroom Sausage Thanksgiving Stuffing

This Thanksgiving stuffing recipe is like no other, we promise. First of all, it is vegan, yet any meat-eater will love this recipe.

INGREDIENT LIST
 1.50 lbs Cremini MUSHROOMS - diced
 2 Large ONIONS - diced
 5 Stalks of CELERY - medium size
 2 Large APPLES - diced
 10 Beyond Meat SAUSAGE patties - cooked & cubed**
 1 Package of herb STUFFING cubes*
 3 cups Apple JUICE
 3 cups Veggie BROTH
 3 tbsp SAGE***
 3 tbsp THYME***
 1 tbsp ROSEMARY***
 SALT & PEPPER as desired
 Splash of coconut AMINOS (optional)
* You can buy gluten free brands if needed
** If you want recipe oil-free then omit this ingredient
*** Add more herbs if desired
DIRECTIONS STEP BY STEP

Bake sausage patties in the oven as per package & chop in pieces & put aside

Add all of the chopped mushrooms to a large hot pan

Stir & cover until the mushrooms cook down & bring out much of their own liquid

Now add diced onions into the pan with the softly cooked mushrooms

Add a bit of salt & pepper & stir

Put the lid on & cook until mushrooms cook further & onions become translucent

Add all spices: Sage, Rosemary & Thyme

Add diced celery & apple

Add dry herbed stuffing cubes

Begin to add apple juice & veggie broth a little at a time; allowing the mixture to cook down

Continue cooking, stirring & adding veggie broth & apple juice till 100% incorporated

When the mixture has cooked down add aminos, if using

Add sausage pieces & stir to mix

Add more seasoning if needed.
