This vegan gluten-free squash fritter is full of herbaceous flavor & is truly delicious. Once you eat it you will ask yourself how something so simple can taste so good. Yellow squash is highly nutritious because it is high in vitamins A, B6, C & folate. It also contains high amounts of the essential minerals phosphorus, potassium. magnesium & manganese, which make it a very healthy vegetable choice for your meal. As with all other veggies, it is full of fiber, which is essential to health in so many ways. All that aside, it is the flavor & simplicity that will keep you coming back to this recipe time & time again.
Tip: To make oil-free it is easy to leave out the parmesan cheese & still have a delicious fritter.
Note: This recipe can be pan-fried, air-fried, or baked in the oven. Since we preferred the air-fried version best the following recipe is for baking or air frying.
Prep ingredients
Remove excess water from squash with strainer or towels
In a large bowl add squash, seasonings & cheese & mix thoroughly
Add chickpea flour & mix thoroughly*
Form patties into 3” discs
Load patties into air fryer or baking tray (parchment paper recommended)**
Cook about 15 min.
Flip patties & cook another 5-10 or until desired crispiness
Garnish with fresh cilantro leaves
Devour & Enjoy!
NOTES:
*It is to be expected for the final mixture to be a bit wet/loose, but you will be surprised how well they hold together after they are cooked. However, if too loose, add more flour.
**If baking in the oven, preheat to 400 F.
