Makes 8 waffles
These spelt almond waffles are out of this world. The flavor of the spelt combined with maple syrup makes me love this waffle more than any other one I have had. I love to top my waffle with a yogurt-like sauce and of course, maple syrup but the sauce I made today was crazy good: cashews, yogurt, lemon & miso & maple syrup. Wow, so good. And the higher fat almond flour allowed me to only add a couple of tablespoons of oil, which make it less than 1/2 teaspoon of oil per waffle.. not bad! Whole grains are so much healthier and so much tastier and once you try spelt you will also fall in love with it too! Enjoy this one on your next Saturday morning breakfast table!
Add the ground flaxseed to water to make a flax egg & set it aside.
Beat the aquafaba till it forms white fluffy peaks.
Turn on the waffle iron to preheat.
Mash the banana & add to a mixing bowl. Add to the mixing bowl: flax egg, soy milk, orange juice, olive oil, vanilla, or almond extract & blend well.
Combine the spelt flour, almond flour, & baking powder together in a bowl.
Add the wet ingredients to the dry ingredients & carefully stir to blend. Don’t over blend.
Now add the aquafaba and fold it in gently.
Spritz waffle iron with oil spray to prevent sticking.
Add batter to the waffle iron; close lid & do not check for 4 minutes.
Open the lid & remove if done, otherwise cook another minute or 2.
Top with cashew maple miso butter and maple syrup.
