Vegan Mushroom Tacos | Oil-free | Delicious

These mushroom tacos are spiced perfectly and are so easy & delicious. When you cut the mushrooms into these diced cubes you get the “meatiness” that most mushrooms offer & even your meat-loving friends will love these. They are oil-free, which is amazing because you would never know it since you have so many great flavors inside the fresh corn tortilla. I love to make my own salsa but if you don’t have time just buy your favorite one but having salsa and avocados on these tacos take them up another notch.

Who doesn’t love great tacos? Is there anyone? I don’t think so and these mushroom tacos won’t disappoint you. You can fill yourself with whole foods and nutrients with none of the grease. They are a must-try! If you don’t have king oyster mushrooms just use any mushroom you can get your hands on and dice them up finely!  Enjoy!

SALSA INGREDIENTS
 5 Medium TOMATOES
 1/2 Bunch of CILANTRO
 ½ ONION
 1 tbsp Apple Cider VINEGAR
 SALT to taste
MUSHROOM TACO FILLING INGREDIENTS
 3 KING OYSTER MUSHROOMS
 ½ ONION - (1/2 for salsa recipe & 1/2 for inside tacos)
 ½ tsp CUMIN
 ½ tsp SAZON’
 ½ tsp EPAZOTE (Mexican Oregano - use regular oregano)
 ½ tsp ONION POWDER
 ¾ tsp CHILI POWDER or Taco Seasoning
 SALT to taste
 1 AVOCADO sliced
 1 TOMATO diced
 CILANTRO for inside the tacos.
DIRECTIONS FOR SALSA

Make the salsa first so it can develop its flavors while you make the tacos. To make salsa add the onion and cilantro to the food processor and mix until finely chopped.

Next, add the tomatoes and mix until it roughly blended & has a chunky texture.

Add salt & vinegar & set aside or enjoy while making tacos!

DIRECTIONS FOR MUSHROOM TACO FILLING

Prep the avocado, onion, tomato & cilantro for the final dish.

Cut the king oyster mushrooms into small diced-sized chunks.

Add to a hot skillet & add a splash of veggie broth.

Continue to sauté till mushrooms let out their liquid and begin to soften & brown.

Add more veggie broth as needed to help liquefy the caramelized brown bits on the bottom, which add flavor to the mushroom mixture.

Add spices & continue cooking & adding broth as needed. Cook until the mushroom mixture dries a bit.

*Optional step: Remove cooked mushroom mixture from pan and put on a baking sheet or in air fryer & broil or air fry for 5 minutes. Keep an eye on it as you just want the outside to get a bit more caramelized and almost crusty. When done set aside.

Heat taco shells in a frying pan until you get the texture you like.

Serve already filled or line up ingredients taco bar style and let everyone build their own.

Build your taco by taking 2 spoons of the filling mixture, then add tomatoes, onions, avocado, salsa & top with cilantro.
