Makes 12 large cookies
These vegan ginger molasses cookies are the perfect holiday cookie. They are so easy yet so delicious. The warming & healing aromatic spices not only taste delicious but also add a lovely holiday aroma to your house. The sugar sprinkled cracked top is key to its traditional look, but it is the chewy molasses texture in that first bite, that will make you fall in love with this cookie. We searched all over for the perfect vegan ginger molasses cookie recipe and could not find one that we loved until we created our own. It is a must-try! Add it to your holiday cookie tray & wait for the compliments!
Preheat the oven to 350 F
Into a bowl, add and mix the following ingredients: molasses, sugar, oil, milk, grated ginger, powdered ginger, ground cloves, cinnamon, baking soda & salt
Add first only 3/4 cup of the 1 cup of flour & mix till incorporated
Now add 1 T of flour at a time until the dough is soft and only slightly sticky
Form dough into a ball with your hands
Line your baking sheet with parchment paper
Take some dough and roll it into a ball then put it on the parchment paper. Push it down and form into a flat disc approximately 2-3” in size. Leave a space in between cookies since they will spread
Finish putting all dough balls into a disc shape and on the tray, until all 12 are formed
Bake for 14 min. Check them around 11 minutes to be sure. When done they will have a slight crust around the edge & soft inside. Time to remove from oven.
Immediately sprinkle with vegan sugar
Keep them on the tray to cool & finish cooking for 30 minutes. Be sure not to try remove them from the tray before this time or they will fold & be ruined.
After 30 min peel away from parchment paper & plate them.
