These vegan blueberry banana pancakes are so fast & easy yet filled with so much flavor that you won’t believe it until you try them. The oats are ground and used whole to replace flour, which makes them gluten-free, while the banana is used for the sugar and sliced into the pancakes for a natural caramelized goodness! Add blueberries for additional health benefits & a delicious warm sweetness on your fork. Drizzle with warm maple syrup or eat with fruit compote on top or topped with yogurt & even just plain. However, you like them just make them & try them because these pancakes will become a staple in your household once you try them.
These pancakes are gluten-free & oil-free if you cook on a non-stick griddle because there is no oil added to the batter.

Add to blender: Oats, ONE banana, plant-based milk, baking powder, vanilla & almond extract, and salt.
Blend till smooth.
Slice the one remaining banana that will go inside as you make them.
Add a tablespoon or 2 of additional whole oats at this point if you want a bit of texture.
Stir and add more milk if the batter is thick - if you like the consistency then you are ready to go. Along the way add more milk to keep the batter a nice pourable consistency.
Grease your griddle with oil or butter.
Pour batter onto griddle and spread if needed to get the size you want.
Add sliced banana & blueberries if using.
Wait until edges are drying and bubbles appear, then check & if browned flip fast and perfectly! :-)
Be patient and all them to cook thru & then stack on a beautiful plate.
Continue until you use all batter and the sliced bananas & blueberries.
Top with fruit garnish, butter & maple syrup if desired.
