The crunchiness of the oats, the sweetness of the nectar, combined with irresistible peanut butter make this combo super delicious. It is hard to believe something so easy can tastes so good really! Use it as a simple snack or topping, eat a bowl of it for breakfast or build a grand parfait with fruit & vegan yogurt. Any way you try it you will love it. Lastly, granola is so easy to make yet so expensive to buy & when you make it yourself you can control how much oil if any, you will add to the recipe so it is a win-win. Heat oven to 350F & line baking tray with parchment paper
Add coconut oil to pan & melt.
Add peanut butter & stir till combined.
Now add coconut nectar or maple syrup, vanilla extract & salt, if using.
Stir until smooth & bubbling, then remove from heat.
Add oats and stir well to coat the oats evenly.
Spread out on a baking tray that is lined with parchment paper.
Bake at 350F for 20-30 minutes or until browned, turning halfway thru so that it can evenly brown.
Let cool on the baking sheet. Then add to a bowl & add the peanuts, coconut flakes & any other items you want to add & mix to combine.
