Stuffed Plantain Canoes

The plantain boats are stuffed with a delicious and very versatile bunch of ingredients.

INGREDIENTS
 6 Ripe PLANTAINS - slightly soft when you push on them
 6 oz KING OYSTER MUSHROOMS (3 large or any other mushroom)
 6 Beyond Meat SAUSAGE PATTIES (baked & chopped coarsely)
 1 cup Dried Black BEANS
 1 ONION diced
 3 ½ cups ROASTED RED PEPPER chopped
  cup OLIVES (I use manzanita olives)
 CILANTRO for garnish
 A Splash of VEGGIE BROTH to sauté onions & mushrooms
 1 tbsp SAZON
 1 tbsp ADOBO
 1 tsp GARLIC POWDER
 SALT & PEPPER to taste
DIRECTIONS

Cut ends off plantains & slit skin once from top to bottom & peel.
Use hands to coat the plantains with olive oil.

Place in air-fryer & cook at 400F for 20 min (or till fork tender). Flip plantains after 10 min.*

Bake sausages in oven at 425F until cooked thru & crispy on the outside.

In a frying pan, add diced onions, mushrooms with a splash of veggie broth & sauté.

While sautéing add seasonings & cook until tender. (About 10 min).

Add black beans to the onion mushroom mixture.

Add to pan chopped peppers, sausage & sliced olives. Mix thoroughly.

When plantains are cooked & cooled, place them on a plate & make a slit lengthwise (leaving about 1/2” from each end, being careful not to cut all the way thru the plantain).

Carefully open the plantain slit to allow room for filling. (It will look like a canoe).
Spoon stuffing into plantain boats. (We pack ours in).

Garnish with chopped cilantro
