This tomato jam is out of this world. It is one of those OMG foods, I promise. Any way you serve it up your guests will ask for more.
Pul a plate in the freezer for the final test to see if the jam is set.
Toast cumin seeds in the pan till aromatic and browned a bit.
Add to blender: cumin seeds, vinegar, grated ginger, and lemon & blend till smooth.
Take out of the blender and set aside in a bowl.
Add tomatoes to the hot pot on the stove.
Add the rest of the ingredients to the pot & stir. Put the lid on and bring it to a boil.
Once boiled take off the lid, but continuing stirring occasionally. You are waiting for it to become a gel-like consistency.
After about 30 min it should be jam-like but to test it put a spoon of the jam on your plate that is in the freezer and put it back in the freezer for 3 minutes. Taste it and see if it is the consistency you like.
When done store in a glass jar with a lid. Will keep fresh in the fridge for several weeks.
Enjoy this jam on some crackers or your veggie bowls, curry dishes, or toast.
