This tomato jam is out of this world. It is one of those OMG foods, I promise. Even if you don’t love tomatoes you almost would not know they are in this recipe because the combination of the aromatic spices combined with the maple syrup and the tomatoes makes it almost like a tamarind chutney but even better. It is very versatile because you can spread it on toast or crackers, eat on a curry, put it in a sandwich wrap or on your veggie bowls. Any way you serve it up your guests will ask for more.
So watch this video then go to the market and get the ingredients and make up your very own jar of tomato jam. You may not even want to share it because it is so good!

Pul a plate in the freezer for the final test to see if the jam is set.
Toast cumin seeds in the pan till aromatic and browned a bit.
Add to blender: cumin seeds, vinegar, grated ginger, and lemon & blend till smooth.
Take out of the blender and set aside in a bowl.
Add tomatoes to the hot pot on the stove.
Add the rest of the ingredients to the pot & stir. Put the lid on and bring it to a boil.
Once boiled take off the lid, but continuing stirring occasionally. You are waiting for it to become a gel-like consistency.
After about 30 min it should be jam-like but to test it put a spoon of the jam on your plate that is in the freezer and put it back in the freezer for 3 minutes. Taste it and see if it is the consistency you like.
When done store in a glass jar with a lid. Will keep fresh in the fridge for several weeks.
