Combining Rosemary to the warming ginger, cardamon & cinnamon spices is already an amazing combo but then you add Spelt flour & molasses and it becomes an OMG recipe! These little cakes are much more than a pancake because they are like little mini cakes made in a pan. First of all, they are healthy because they are vegan and oil-free, but then when you add all those healing spices & molasses, which can aid in joint pains it takes it up another notch on the health ladder. Finally, don’t forget the easily digestible Spelt flour that I used to create these little bundles of deliciousness, which make this pancake a food medicine recipe 100%. Good for breakfast, brunch, and even dinner. They are so good you may eat the whole stack! Enjoy!
Mix together the flax egg (water & ground flaxseed) & set aside.
Then add vinegar to the soy milk. Stir & set aside.
Add dry ingredients to a bowl: flour, sugar, baking powder, & all the spices, & stir to combine.
In another bowl add the wet ingredients: soy milk mixture, flax egg, yogurt, molasses, & vanilla, & stir to combine.
Add the wet ingredients to the dry ingredients and stir to combine.
Fold in the diced apples. Make sure the mixture is thick as you don’t want it to spread much when you put it in the pan.
Fill a 1/4 c measuring cup & pour into a hot cast iron skillet or use a non-stick to prevent using added oil. Take a spatula and bring the edges in to keep it shaped into a circle & about 4” in diameter. Make sure it is thick as you want these to be like mini cakes. These are truly PAN cakes.
Turn heat down to medium and let the cook on one side until they bubble on the top. Then turn and allow them to cook slowly until cooked all the way thru. It will be about 5-8 min on each side.
Remove from pan, make a beautiful stack and add butter or fruit or just plain with a nice drizzle maple syrup over the top.
