Rustic Rye & Spelt Scones with Dried Cherries & Dates | Vegan | Oil-free | Healthy & Nutritious

Makes 8 Large Scones

If you love whole grain baked goods and you are craving something rustic, healthy & nutritious then today’s recipe will blow you away. These Rustic Rye & Spelt Scones with Dried Cherries & Dates have that amazing earthy flavor of whole grains but also have a delicious sour cherry or date in almost every bite, which makes you just keep wanting the next bite. The flavors of the rye & spelt whole grain flour combined with the depth in the sweetness of the sucanat & the creamy coconut milk & yogurt make this rustic & delicious but not dry at all. It is a combo that is so natural together that you will find yourself making these over and over just to have on hand a healthy & nutritious treat to enjoy. Rustic Rye & Spelt Scones with Dried Cherries & Dates | Vegan | Oil-free | Healthy & Nutritious
INGREDIENTS
 250 g Wholegrain RYE FLOUR (2 cups)
 250 g Wholegrain SPELT FLOUR (2 cups)
 1.50 tsp BAKING POWDER
 ⅓ cup SUCANAT (or brown sugar or coconut sugar)
 ½ tsp SALT
 90 g Chopped DRIED CHERRIES
 90 g Chopped DATES
 1 cup Full fat COCONUT MILK
 1 tbsp LEMON JUICE
 1 tsp BAKING SODA
 1 cup Vegan YOGURT
DIRECTIONS

Pre-heat your oven to 400F (200C)
Add the Spelt flour &  the rye flour to the bowl.

Add baking powder, sucanat sugar, and salt to the bowl & stir to blend.

Add the cherries & the chopped dates into the flour mixture so they don’t stick together. Set aside.

In a separate bowl add the coconut milk.

Then add the lemon juice & stir.

Now add the baking soda and watch it fizz.  Stir gently so that you keep the foamy mixture.

Lastly, add the vegan yogurt & mix but don’t over mix.

Add the wet ingredients to the dry ingredients & and combine with a spatula. When there is still flour left to mix in dump the mixture on a piece of parchment paper and start trying to incorporate all the flour without over kneading or mixing.

Flatten the dough into a circle. (You can add a piece of parchment paper on the top and flip over to add more flour to keep the dough floured and not sticky. on either side.

Cut the dough into 8-10 pieces. You don’t have to cut all the way thru but you can as long as you put all the pieces together and in a tight circle before you bake.
Slide the parchment paper onto a baking tray. 
Sprinkle with some sucanat sugar and dust with a little flour if there is none on the top.

Transfer to the oven & bake for 20-25 mins.

Remove from oven and allow the scones to cool till warm before you slice or break one off to enjoy!
Try them with vegan butter & maple syrup, flavored vegan yogurts, or even plain yogurt, or jam or butter and jam. They are so earthy & nutritious but so tasty and can you believe all this with NO OIL. Yes, it is true!
