Lentil Burger With Vegan Truffle Camembert Cheese

Makes 4 large burgers or 6 medium

The title of these burgers is simple but the flavor is bold! The lentils when combined with the ingredients really take on a very meaty texture & the red wine & herbs take it to another level. The flavors of this burger are totally exotic and delicious but when you add the vegan specialty cheese it will take you to the moon! The cheese I used was hand-made by Youssef Vromage at his local cheese shop, which is around the corner from my house. It was a Truffle Camembert Cheese. OMG, this melted on top of this burger made it truly gourmet & filled with tons of delicious flavors. The only oil in this recipe is in the cheese so if you are oil-free make the patty & skip the cheese.  Be sure to make this because lentils are an important high protein, high nutrient-dense food for vegans. Adding them to your diet is easy when they taste like this! Try it for yourself!

Lentil Burger With Vegan Truffle Camembert Cheese
INGREDIENTS
 1 Small ONION sliced into thin slices (about 130g)
 2 cups COOKED LENTILS (black, brown or green but not red) (400g)
 ⅓ cup COOKED BROWN RICE
 ½ cup BREAD CRUMBS
 2 GARLIC CLOVES pressed or diced finely
 2 tbsp CHIA SEED
 6 tbsp Water (to make 2 chia eggs, which help hold mixture together)
 1 tbsp RED WINE VINEGAR
 1 tbsp Dijon MUSTARD (powder will work too)
 1 tbsp THYME dried
 1 tbsp OREGANO dried
 1 tbsp BASIL dried
 1 tsp MARJORUM dried
 1 tsp ROSEMARY dried
 1 tsp BROWN SUGAR
 1 tsp SALT or to taste
 ¼ tsp PEPPER or to taste
DIRECTIONS

Preheat oven to 425F.
Mix chia seeds into the water and stir to blend & then set aside to gel.

Sauté the sliced onions in veggie broth. When softened add all the herbs to the onions in the pan & finish caramelizing them. Transfer the sautéed onions to a bowl.

Add the lentils, rice, garlic, vinegar, mustard, chia egg, sugar, salt, & pepper.

Add 1/2 of the breadcrumbs & stir.. then add the rest of the bread crumbs if needed (you can add more if the mixture is too wet & won’t hold together).

Form into a ball & cover. Put in the fridge for 30 minutes.

Take the mixture out of the fridge & divide it into 4-6 patties depending on what size patty you want. Shape into patties. Spray with oil if you desire, otherwise fine to not do this step.

Place patties on a baking sheet & bake for 10 minutes, then turn the patty over & cook for another 10 min or until browned.

Remove from oven & place your delicious vegan cheese on the patty & broil for 2-3 minutes until melted. Warm the bun at the same time if needed.

Place the burger patty on the bun & pile high with vegan mayo, grilled mushrooms, grilled onions, tomato, lettuce, mustard, ketchup & any other delights you desire.
