The best Italian almond biscotti recipe is right here! The Biscotti is a delicious biscuit or cookie, but not traditionally vegan, which is a bummer until I discovered how easy they were to make vegan. I love biscuits because they are so nice with tea or when you have a friend over to share tea with, not to mention during the holidays when having cookies on hand is a must! You can make these with pistachios or hazelnuts, which I usually do because almonds are a bit hard on the environment due to the water they require. But hey I had some in my stock and wanted to roast them and use them for this recipe and I am so glad I did. The lovely flavor of almond and orange zest is optional but really delicious. Roast your almonds by placing on a baking sheet and broiling them. Watch them closely and turn a few times. Then remove and set them aside. Now preheat oven to 350F
In a bowl add the sugar and milk and set aside to dissolve a bit while you mix the other ingredients.
To your food processor add both flours, baking powder, butter, and lemon zest and blitz until the ingredients are well combined. It likely won’t be a ball of dough just crumbs.
Add crumb mixture to the bowl of milk and sugar and mix with dough scraper or spatula until a dough ball is formed. If you need to add more milk do so 1 tablespoon at a time.
Add the roasted almonds and mix the dough well to spread them out.
Divide the dough into 2 pieces. Form each half into a log keeping them about 2” wide as this will be the length of biscotti. Flatten the log so it is now a flattened rectangle shape.
Place both logs onto a baking tray lined with parchment paper and place in 350F oven. Bake for 20 minutes rotating the tray once while cooking for even browning.
Remove tray from oven lower oven temperature to 250F.
Now remove logs from tray and let cool for 15 minutes. Do not skip this step as they will crumble if you try to cut the logs while hot.
Cut logs on the diagonal using a serrated knife into about 1” sized biscotti.
Place all biscottis on their side on the tray and bake for 5 min. Turn them over and bake another 5 min.
Remove biscottis and let them cool…and then ENJOY!
