Makes one loaf
This healthy loaf of bread is full of whole grains and fiber, which is what makes it so healthy. The bread is packed with nutrition because of all the omega 3’s and fatty acids, which are the heart-healthy good fats. Oats are known for their heart-healthy benefits also so eating this bread is not only delicious by truly life-changing & healthy! This recipe is inspired by Sarah Britton who called her loaf “The Life-Changing Loaf” but in our recipe then nuts & seeds are broken down to make for easy digestion as well as the oats & seeds. This one is a must-try!
Grind sunflower seeds, flax seeds, & chia seeds & add to a large bowl.
Break down the oats by adding to a blender or food processor and zapping with a few pulses. This step is optional but I like it better when I do this as it produces a crumb that is not 100% seeded and course. Add oats to the bowl with the seeds.
Add psyllium seed husks to the bowl
Chop almonds or other nuts and add to the bowl.
Add salt.
Now in another bowl add maple syrup, coconut oil, and water and stir.
Add this wet mixture into the dry mixture and stir well.
Immediately pour this mixture into a loaf pan (flexible silicone one is best).
Press it down & smooth the top & let rest on the counter for at least 2 hours. You can let it rest for up to 24 hours.
When the dough is ready you should be able to pull the sides of the loaf pan away from the loaf & it will retain its shape.
Preheat oven to 350F / 175C
Place loaf pan in oven & bake for 20 minutes.
Remove loaf pan and bake another 30-40 min or until loaf is slightly golden.
Let cool for 30 min before slicing.
You can put this bread in the freezer or make an extra one and keep it in the freezer. In the fridge, it can last a week or so.
