Easy No Knead Mashed Potato Flatbread | Oil-free | Gluten-free option

This flatbread recipe is super easy and super delicious. NO NEED TO KNEAD or wait around to let it rise.. just mash, mix, press it out with your hands and bake and you have a delicious combo between a potato pancake and a flatbread. The breads can be eaten with nothing on them as they are that good, but try them your favorite veggies or mushrooms and arugula or pile with vegan taco filling and fold them like a soft taco. Any way you want to use them whether folded or flat you will enjoy these easy little mash potato breads. Give them a try.. they are easy and fast & a bit addictive once you get started on them! 🙂

Easy No Knead Mashed Potato Flatbread | Oil-free | Gluten-free option
INGREDIENTS
 12 Smaller yellow POTATOES. Use any amount you like. (I like Yukon golds)
 ¼ cup Plant-based MILK
 ¼ cup FLOUR (I used Spelt - use oat flour to keep it gluten-free)
 SALT to taste
 Fresh HERBS ( I used chives and scallions)
DIRECTIONS

Preheat oven to 400.

Boil potatoes.

Mash with potato smasher or immersion blender or hand held mixer.

Now add salt, and some of the milk and the flour & blend together.

Line baking tray with parchment paper and spoon an even amount of the mashed potato dough on the tray.

Sprinkle flour on the top of each potato mound. Now smash down or flatten with your hand into the shape of a tortilla or flatbread.

Using a fork make marks to help them stay flat and not puff up.
Bake 400F for 20 min
