These EASY Vegan Cauliflower Taco Crumbles make delicious and very authentic tacos that even meat lovers will enjoy. With this Sol Canyon Taco Meat Crumble recipe, you will not only enjoy delicious tacos but healthier tacos, as these are oil-free & filled with nutrition.
Preheat oven to 400F. Add your pre-packaged riced cauliflower or make your own in a food processor & add 2 cups to your bowl.
Now process the mushrooms until you have a similar consistency, and add them to the bowl.
Now add the walnuts to the processor and pulse until you get the same consistency and add to the bowl.
Stir in coconut aminos and stir to mix.
Now add your spices: chili powder, smoked paprika, cumin, onion powder, garlic powder & salt & pepper. Stir to blend well.
Spread mixture onto a parchment-lined baking sheet and bake for 20 minutes at 400F. Then stir and move the mixture around and bake 10-20 more minutes until it is the consistency & texture you like.
Spoon into taco shells, add chopped onions, tomatoes, guacamole or avocado slices, and shredded lettuce & enjoy as delicious authentic tacos! You can also use in salads, on top of nachos, or as an enchilada filling.
