Who doesn’t love a ball of cheesy goodness? When you use healthy ingredients like sprouted brown rice, broccoli, miso & combine it with that vegan cheese you get a healthy result that will have you making these over and over again. Yes, that is right a healthy baked broccoli cheese croquette. You have to try them to believe it. You won’t believe how good these are till you try them! The lightly crunchy outside & the melty cheesy inside make you want another one and then another one. And the combo of all the ingredients baked together masks the broccoli so even kids who don’t like broccoli or veggies will love these! These are a winner… try them!
If your rice is not already cooked, then prepare this first.
Preheat the oven to 400F.
Prepare the flax egg by mixing the ground flaxseed & the water together. Set aside.
Cut the broccoli into small pieces using mostly the florets and not too much of the stems. You can save the stems for soup.
Add the broccoli florets to the steamer basket & steam till soft enough to mash with a fork.
Add the drained and steamed broccoli to a bowl.
Now mash with a fork and if cooled you can use your hands to make it well mashed.
Add the miso paste while the broccoli is hot so it can blend in easily.
Now add the shredded vegan mozzarella cheese & blend with your hands to combine well & mash the broccoli.
Add the spices: onion powder, thyme, salt & pepper & blend.
Add the brown rice and again blend with your hands.
Lastly, add 1/2 of the flax egg & blend with your hands. The mixture needs to hold together when you squeeze it and if it is too loose then add the rest of the flax egg.
Spoon into pretty shapes & place on a parchment-lined baking sheet. You can also shape it into balls if you prefer.
Bake at 400F for about 30 minutes or until the tops are lightly browned.
