Kitchari is an Indian dish that is used by Ayurvedic practitioners & doctors to help people heal because it is filled with healing spices & detoxifying Mung Dal beans.
Turn on the pan to heat it up. Add mustard seed and all the spices to toast them just for a minute or 2. Be sure to stir them while toasting them.
Now add onion and stir. Then add garlic and stir.
Add the chopped tomato and ginger and stir.
Add the rice and mung dal beans and stir.
Add the cauliflower pieces.
Lastly, add 2 cups of water
If using a pan on the stove bring to a boil without the lid on and once it is boiling cover the pan and let cook till rice is done (about 15-20 min). If using an instant pot then choose pressure cook and cook for 3 minutes. Let rest for 10 min after it is done then let steam out and enjoy!
