Our Sol Canyon Kitchen’s Carrot Ginger Coconut Soup is the best version of this recipe you will ever eat! You will find yourself moaning in joy with each bite because it is just so delicious. If you love ginger then add a lot of ginger and it is heavenly, if you prefer to leave it out then you will still love the smooth coconut undertones contrasting the slight citrus ones that melt into the warm carrot earthy root vegetable base. I promise that every time you eat this soup you will be reaching for seconds. This has become our #1 favorite soup in our kitchen! Isn’t it ok to have an addiction if it is a soup addiction? Sauté onions & garlic in a soup pot with a splash of veggie broth till translucent
Add carrots & stir to combine.
Add salt & pepper to taste & stir.
Add lemon juice, orange juice & 6 cups of veggie broth.
Cover and cook until carrots are tender. (As soup reduces & thickens add additional veggie broth as needed).
Add fresh grated ginger & coconut milk & stir till well combined.
Blend smooth with an immersion blender or regular blender.
Cook for another 10 min or so to incorporate all the flavors.
Garnish with cilantro & serve.
Warning: This soup is addicting! But it is oil-free, vegan, & full of beta carotenes so don't worry! :-)
