Summer is a great time to eat lots of fruit or even do “fruit cleanses” where you eat only fruit for 3-10 days or more. Fasting, cleansing, and detoxing is easier in summer when the weather is hot and we crave the water-filled fruit naturally. I get asked all the time how I like to break my cleanse and for me, I feel best doing it with this lentil soup recipe that I want to share with you today.
Also, by the end of summer, I get so craving soup and something warm and hearty, something a bit salty but healthy and easy to digest. This red lentil soup recipe is just like Indian Dal, which is known as a healing food in the Indian culture.
Red lentils are filled with so many health benefits. Here are a few:
They are
- Full of polyphenols. …
- High in protein. …
- A good source of iron. …
- Full of fiber. …
- Good for your bones. …
- A good source of folic acid. …
- High in magnesium
Here is a video of a very simple but VERY delicious lentil soup I make. It is so versatile because you can change the spices to flavor it Indian, Mexican, or just keep it plain. You can add avocado chunks and a dash of apple cider vinegar, which is one of my favorite or you can pour it over a big bowl of quinoa to make it super hearty and even more nutritious!
However, you like it just enjoy every bite of it.
Here is the recipe video.

Vidal
