Do you LOVE tomatoes? I sure do.
I love them so much that I can say it is almost my favorite thing about summer. I am a fall & winter lover, but summer tomatoes well that makes summer manageable. I think my most favorite way to use tomatoes or my most favorite food is my home made salsa. I learned to make it 30 years ago when I had a friend over & we were both craving salsa. We ended up eating the whole bowl (which chips) & since then he always asks me to make him Vidal’s salsa when he comes for a visit.

Tomatoes a great source of vitamin C, potassium, folate & vitamin K, which are all so important for many functions we take for granted. Vitamin C & potassium are important cancer fighting nutrients & you can get that benefit while enjoying this salsa.. how great is that?
Vidal’s salsa is RAW & a very simple recipe to make up in 5 minutes. One thing I have learned is that everyone has their own secrets. I would say the secrets of my salsa is the order in which I chop things, the amount of cilantro I put in along with adding some apple cider vinegar. Also maybe how small I chop the pieces by using a food processor makes it taste so different than when you chop it by hand. Ok I guess the whole recipe is my secret till today! LOL
If you are not a lover of cilantro you can put in other things like green or red bell peppers, garlic and jalapeños. Of course you can add any of those in addition to the cilantro if you want… but I love it just simple so I can taste the sweetness of the tomatoes, the tang of the vinegar, the herbiness of the cilantro and the pungent flavor of the onion. My favorite way to eat the salsa is on organic flax, chia, quinoa chips or baked low fat corn chips. But I pile the salsa as high as I can so I can maximize the ratio of salsa for each chip, which allows me to eat less chips & fill up with the nutritious salsa. Since I was eating a 99% fruit diet the last 2 years I would make a mango salsa & put it in that or put it in my guacamole, but just recently I was ready to enjoy it my old way on my quinoa chips. YUM…. Oh yeah and I also ate it alone as a gazpacho, which was delicious.
